This is one of the most needed and useful setups in the game, although a little complicated to start up, it does provide a nice amount of dubloons for you if you build up a steady chain.
You can have a total of 10 lots in this game to erect structures (buildings) on, and you can have an unlimited amount of Warehouses. If you do the economy tutorial, you get the first one for free, the ones afterwards however are not. A second Warehouse will cost you 3200 dubloons, the third one 16200 and so on (i.e. (([Number of warehouses you own] + 1)^4) * 200). Place your Warehouses wisely.
If you do the economy tutorial and finish that mission arc, you can get the deeds for a Woodcutter's Camp, Gravel Pit and Draughtsman's Office. It will also give you a few resources to play around with.
To start this production line you will need a few resources to build the structures. Chances are you will need to either attack trade ships or hope someone has some Leather to sell you, as you will need 4 Leather to start off your plantation.
To begin with, build your draughtsman, create 3 Pasture deeds, 3 Plantation (General) deeds, 2 Tanner deeds and one Slaughterhouse. Although you won't be able to build them all immediately, you will need them for this setup. After you're done with that, demolish all your structures from the tutorial, including the Warehouse - unless of course you want to have two Warehouses. I recommend you make at least 100 Common Wood and 100 Gravel before you demolish your tutorial structures, saves you buying them later. You can also seed a few structure deeds into the market from your Draughtsman's Office adding a 10% markup for a few quick sales without destroying the economy)
Next - choose the port that fits your needs best. You can see which resources a port has by opening the map and moving the mouse over the port you want to view. A tool tip will appear listing more information on that port. Fortunately, for this production line you will only need Fertile Soil - both the Plantation (General) and the Pasture require that, the other structures don't have any resource requirements.
There are several ports you can pick that have this resource, although it is best if you pick a port near where you are likely to be most of the time, since travelling back and forth all the time to use your resources is a bit tedious. For this example, as a Pirate I picked Matthew Town. I chose this mainly due to its central location, and the fact it has one of the most used Pirate Auction Houses.
After gathering 4 Leather, 2 Ingot, Iron, 5 Gravel and 10 Common Wood, create your first structures by going to the port you selected as your base of operation. Open the economy screen, build a Warehouse and then your first Plantation (General). Thereafter, build a Pasture, which requires 2 Gravel, 1 Ingot, Iron and 10 Common Wood. Next build your Tanner - for this you will need 5 Granite, 5 Gravel and 10 Common Wood (which is why I recommended to make at least 100 of each earlier). And finally, set up the Slaughterhouse, using 5 Granite, 10 Gravel, 1 Ingot, Iron and 10 Common Wood.
After you have these, you will be able to slowly start producing Leather. After you have the first batch of Leather made (unless you are lucky and find some elsewhere) you can start to build a second Plantation (General) and a second Tanner. If you're done with that, build another Pasture, another Pasture, another Tanner and another Plantation (General). That will use up all 10 lots you have available, and you will have be in the Leather making business.
Since this setup doesn't use up all labor on all the structures, you can either buy additional Maize or make friends with someone who has excess Maize to maximize your Leather production. With another player supplying you with additional Maize you can almost double your production.
At the moment, there is not much use for the Beef at the moment. The best way to get rid of it is either to give it to a colleague that works on provisions or to put it on the Auction House for 1 dubloon.
